Day 7: Merry Christmas Salsa Tradition
WELCOME TO DAY 7 OF MY 12 DAYS OF CHRISTMAS DECORATING, CRAFT AND GIFT IDEA CHALLENGE.
I am just cresting the half way mark through my 12 days of Christmas decorating, craft and gift idea challenge and I hope you have enjoyed it so far.
Today, I share a recipe for my version of Merry Christmas Salsa.
The gift of my Merry Christmas Salsa to my family and very close friends each year has been going on for a long time, so I decided I am officially going to call it a tradition.
This recipe is made with canned tomatoes and I think it tastes as good as it would with fresh tomatoes:
2 cans of whole tomoatoes (28 oz) 2 cans of tomato sauce (7.5 oz) 1 red pepper chopped 2 green peppers chopped 2 cups of white onions chopped 2/3 cup of white vinegar 3 tablespoons of granulated sugar 2 teaspoons of coarse pickling salt ( I use regular table salt) 2 teaspoons of paprika 1/2 teaspoon of garlic powder 1/2 teaspoon of oregano 1/4 to 1 teaspoon of cayenne pepper to your liking
Put all of the ingredients in a large pot, bring to a boil, reduce to a simmer and cook for 1 1/2 hours.
I put mine in canning jars and give them a water bath of 5 minutes.
This will yield six to seven 1/2 pints of salsa.
