6 Of My Favourite Comfort Food Recipes

Living in Canada, we’re no strangers to the cold, especially during winter. But for me, nothing beats the warmth of cooking up one of my favourite comfort food recipes to help get through the chill.

When I’m in the kitchen, I love to pull out my well-worn cookbooks or flip through my collection of handwritten recipes. To make sure you can recreate these dishes just as I do—without missing a step—I’ve found links to the original recipes online, straight from the source. The beautiful food photos are also from the original recipes and all credit goes to the source.

I’m so excited to share these with you here on the blog. Let’s dive right in!

1. Kielbasa Cheesy Potato Casserole- Featuring tender russet potatoes, savory smoked kielbasa, and a rich, cheesy sauce made with sharp cheddar and creamy milk, this dish is a perfect blend of flavors and textures.

2. Easy Cheeseburger Soup- this one gets made weekly in our house during cold winter months.

It transforms the all-American classic cheeseburger into a creamy, hearty soup that’s perfect for savoring all year round.

3. Vegetable Biryani-  This Vegetable Biryani recipe is one of the most warming and comforting recipes ever! Every bite is full of flavor and so many different textures.

4. Easy Chicken and Cheese Enchiladas- this recipe is from Campbells 😄 here is what you will need:

1 can (10.5 ounces) Campbell’s® Condensed Cream of Chicken Soup or Gluten Free Cream of Chicken Soup or Unsalted Cream of Chicken Soup
1/2 cup sour cream
1 cup Pace® Picante Sauce
2 teaspoons chili powder
2 cups chopped cooked chicken
1/2 cup shredded Monterey Jack cheese
6 (6-inch) flour tortilla or corn tortillas, warmed
1 small tomato, chopped (about 1/2 cup)
1 green onion, sliced (about 2 tablespoons)

Here is how you put this together:

Heat the oven to 350°F. Stir the soup, sour cream, picante sauce and chili powder in a medium bowl.
Stir 1 cup soup mixture, chicken and cheese in a large bowl.  Season the mixture with salt and pepper. Divide the chicken mixture among the tortillas. Roll up the tortillas and place seam-side down in an 11 x 8 x 2-inch baking dish. Pour the remaining soup mixture over the filled tortillas. Cover the baking dish.
Bake for 40 minutes or until the enchiladas are hot. Top with the tomato and onion. See the recipe

5.  Hot Cajun Crab Dip – comfort food doesn’t always mean a main dish. When I make this it sometimes turns into our main meal, yes, it’s that good 😁

6. Mac and Cheese: If there’s one dish that makes its way across countless dinner tables and sparks nostalgia from the first bite, it’s the classic baked mac and cheese. While everyone has their own way and version they love, it’s always fun to read a recipe to see if it is similar to the one you call your go to. I really like this version.
