DIY: Indianized Black Beans

MY favorite thing from this week’s blog searching is from one of my favorite blogs Pretty Frugal Living . It is a recipe for “Indianized Black Beans” ….I love black beans and am always trying to find different ways to prepare them. This one is easy and inexpensive.

RECIPE

1 can black beans (19 oz), drained and rinsed
1 Tbsp oil
1/2 tsp cumin seed
1/2 cup diced onion
1 cup diced tomato
1 fresh hot chili pepper, slivered
1/2 tsp garam masala
1/4 tsp turmeric
1/4 tsp cayenne pepper
1/2 tsp salt
1/4 tsp pepper
1/3 cup broth
Fresh cilantro, chopped

Heat a deep fry pan on medium-high heat. Add oil, cumin seeds and diced onion. Saute until onions start to soften.

Add tomatoes and chili peppers. Cook for a couple minutes so tomatoes break down slightly.

Add garam masala, turmeric, cayenne, salt and pepper. Mix well.

Stir in the broth and let everything simmer for a couple of minutes.

Pour in the rinsed and drained kidney beans, and stir to coat with spice mixture.

Cook beans for at least five minutes, stirring occasionally, until they are done to your liking.

Add fresh chopped cilantro, give one final stir, and serve!
